Some Favorite Recipes | What We’re Eating This Week

Happy Wednesday! I had some time to run to the store this morning with the littlest babe while big sisters were at school and thought it might be fun to share some of my favorite recipes that we are eating this week! I know it might seem odd to share meal ideas for the week on a Wednesday because it’s the middle of the week. However, since I work 2 nights a week and my schedule changes every week, I just meal plan and grocery shop whenever I have time! I often get in a cooking rut and cannot think of anything to make so hopefully this is helpful if the same thing happens to you!

Turkey Burgers with grated Zucchini from SkinnyTaste. This is one of my FAVORITE recipes. I know it seems strange to add zucchini to a turkey burger but it keeps it from drying out and tastes amazing. Plus you get some added veggies!
My recommendations: add WAY more onion and garlic than it calls for and eat on some arugula if you want to avoid the excess carbs of a bun. Serve with a homemade aioli made with some real mayonnaise, a whole lemon squeezed, fresh chopped garlic, and salt and pepper! You can even make these ahead of time and freeze the raw burger patties for easy pre-prepared meals.

Instant Pot Chicken Tortilla Soup from Kitschen Cat. I am obsessed with my instant pot, I love that I can make dinner without having to cook it all day! If you don’t have one, you can probably slow cook in your crock pot! This soup is super easy and SO FLAVORFUL! You will love it. I love to top it off with sour cream, cheese, cilantro and fresh lime.

Instant Pot Garlic Herb Chicken and Rice from The Flavours of Kitchen. Are you seeing a trend here? Basically I am usually a last minute person and love being able to throw dinner into the instant pot at the end of the day! šŸ˜‰ I am serious when I tell you I have never had more flavorful rice than in this dish! You MUST use the chicken stock instead of water. We also used chicken breasts instead of chicken thighs last time we made it and it was still delicious (although I love me some chicken thighs and will probably try that next time!)

Super Easy Taco Salad. This isn’t exactly a recipe, but this is something we eat for dinner or lunch on repeat. I like to use ground turkey for my taco meat. Brown it using your preferred taco seasoning. I use a “Southwest” flavored chopped, bagged salad from our grocery story (H-E-B) but I’m sure you can find something similar at yours. Basically I just add the ground turkey taco meat to the chopped salad and then add whatever you want to jazz it up! (I like to do some shredded cheese, corn, pico, salsa, avocado, etc.) So fast and easy. I also like to make a lot of taco meat for the week and keep it in the fridge to add to meals!
